The first thing that comes to mind when I think about eggplant is ratatouille! There are hundreds of recipes for ratatouille out there. My personal favorite is the recipe Summer Garden Ratatoille from Simply in Season. This dish is simple, quick and represents summer vegetable goodness in every bite. Serve it over cheesy grits (I mix pepper cheese with quick cooking grits), polenta, rice, toasted bread, or pasta. I’ve been known to use it as a dip with tortilla chips also.
The next thing that comes to mind is Caponata, a sweet, sour, savory Sicilian dish. There are several variations of this recipe also. My personal favorites include this hearty Capanata Pasta Bake and the appetizer Bruschetta with Caponata.
A favorite weeknight summer meal in our house is Eggplant Parmesan. The recipe calls for panko bread crumbs, which are great, but regular bread crumbs work fine. I like to add some chopped fresh oregano and basil to the bread crumbs also. Use your favorite homemade or store-bought marinara sauce. This is a great recipe for picky-eaters who think they don’t like eggplant : )
Curried Eggplant and Tomato Burgers were a big hit at last years Veggie Burger Cooking Demo. You can roast the eggplant and cherry tomatoes from this recipe and freeze for winter use (simply defrost and add the remaining ingredients).
If you are turned off by the slightly bitter taste of eggplant try slicing, salting, letting the eggplant sit and then blotting off the moisture. Eggplant, Tomato and Mozzarella tart makes use of this method for preparing eggplant. I like adding some fresh chopped herbs to the tart dough.
Grill Eggplant and make a sandwich with your favorite crusty bread.
